Dried Cabbage
Brassica oleracea L. var. capitata
Dried white cabbage cut to 3x3, 5x5 and 10x10 mm from dense autumn heads grown in the cooler foothill districts of Uzbekistan. Blanching before drying keeps the leaf light in colour and free of the sulphurous note that poorly processed cabbage carries, and the cut rehydrates in minutes. Typical uses are dry soup and borscht concentrates, instant noodle sachets, vegetable mixes for catering and camping rations.
