Phaseolus vulgaris
Purple-violet bean with darker speckling, calibrated at 200–220 pieces per 100 g. It cooks to a dense, mealy texture and holds colour better than light varieties, which is why processors take it for soups, stews, frozen vegetable mixes and dry mixes. Supplied as a cleaned, optically sorted lot at 99% purity and 12% max. moisture, on the same terms as the rest of the kidney bean range.
