Vigna unguiculata
Cream-white cow pea with the characteristic black eye, calibrated at 300–330 pieces per 100 g. Thin skin and a short cooking time — no long soaking required — make it the working grade for Indian, African and Mediterranean cuisine, canned lines and dry retail packs. Cleaned, destoned and optically sorted to remove discoloured and cracked grains; moisture held at 12% max.
